The Philippines is also one of the only countries in the world that grows all four species of coffee, Arabica, Robusta, Liberica, and Excelsa, producing a depth and variety that is truly unmatched. Our blends will feature ingredients like mango from the Guimaras Islands, home to some of the sweetest mangoes in the entire world, creating something unlike anything else out there.

The Work Behind It
Mike has already spent a month in the Philippines exploring coffee shops, learning the culture, and building real relationships with people on the ground. Sarah has spent years immersing herself in the industry, working across multiple coffee shops, traveling to Costa Rica to learn about their growing culture and process, and spending four months in Italy studying their approach to coffee including a tour of Florence's only specialty coffee roaster in the city. Before heading to the Philippines at the end of September, Sarah will also be exploring the coffee culture and approach in Portugal and Greece, rounding out a truly global perspective on the craft. With all of that behind them, they cannot wait to bring this project to life. Despite having a deep and passionate coffee culture, Philippine coffee remains almost entirely unknown in the United States, making it one of the most exciting undiscovered markets in specialty coffee right now and we are excited to introduce it.
